  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)
  • 3 garlic cloves (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 2 cups fresh spinach

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with Italian seasoning, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Sear chicken breasts for 2-3 minutes per side until golden. Remove from skillet.
  4. In the same skillet, sauté garlic for 1 minute. Add heavy cream, chicken broth, and Parmesan cheese, stirring until combined.
  5. Add sun-dried tomatoes and spinach to the sauce, cooking until spinach wilts.
  6. Place chicken breasts in a baking dish, pour the sauce over, and bake for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
