1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
2 cups fresh pineapple chunks
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 red onion, cut into chunks
1 cup BBQ sauce (store-bought or homemade)
2 tablespoons olive oil
Salt and pepper, to taste
Wooden or metal skewers (soaked if wooden)
Preheat grill to medium-high heat.
In a bowl, toss chicken cubes with olive oil, salt, and pepper.
Assemble skewers alternating chicken, pineapple, bell peppers, and onion.
Brush assembled skewers generously with BBQ sauce.
Place skewers on the grill and cook for 10-15 minutes, turning every few minutes and brushing with additional BBQ sauce.
Remove from grill once chicken is fully cooked and caramelized.
Serve hot with extra BBQ sauce if desired.
Soak wooden skewers in water for at least 30 minutes to prevent burning.
Substitute chicken with shrimp or tofu for variation.
Use fresh pineapple for best flavor and caramelization.
