  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes

  • 2 cups fresh pineapple chunks

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • 1 red onion, cut into chunks

  • 1 cup BBQ sauce (store-bought or homemade)

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • Wooden or metal skewers (soaked if wooden)

Instructions

  • Preheat grill to medium-high heat.

  • In a bowl, toss chicken cubes with olive oil, salt, and pepper.

  • Assemble skewers alternating chicken, pineapple, bell peppers, and onion.

  • Brush assembled skewers generously with BBQ sauce.

  • Place skewers on the grill and cook for 10-15 minutes, turning every few minutes and brushing with additional BBQ sauce.

  • Remove from grill once chicken is fully cooked and caramelized.

 

  • Serve hot with extra BBQ sauce if desired.

Notes

  • Soak wooden skewers in water for at least 30 minutes to prevent burning.

  • Substitute chicken with shrimp or tofu for variation.

 

  • Use fresh pineapple for best flavor and caramelization.
