2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 small red onion, sliced
2 cloves garlic, minced
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Slice chicken breasts into thin strips.
In a bowl, toss chicken with Cajun seasoning and a bit of olive oil.
Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook until browned and cooked through, about 5–7 minutes.
