This Cajun Sausage and Rice Skillet is a delicious one-pan meal packed with bold Cajun spices, smoked sausage, bell peppers, and rice. It's an easy, hearty dish that comes together in under 30 minutes, making it perfect for busy weeknights.

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  2. In the same skillet, sauté onion, bell pepper, and garlic until softened.
  3. Stir in rice, Cajun seasoning, smoked paprika, salt, and black pepper. Toast the rice for 1-2 minutes.
  4. Pour in chicken broth and diced tomatoes. Stir well and bring to a boil.
  5. Reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
  6. Return the sausage to the skillet and mix. Cook for another 2 minutes.
  7. Garnish with green onions and serve hot.
