4 cups fresh or frozen pitted cherries
1 cup granulated sugar (divided)
1 tbsp lemon juice
1 tbsp cornstarch
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter (melted)
1 tsp vanilla extract
3/4 cup milk
Preheat oven to 375°F (190°C).
In a saucepan, combine cherries, 1/2 cup sugar, lemon juice, and cornstarch. Cook until bubbly and thickened.
Pour cherry mixture into a greased 9-inch baking dish.
In a bowl, mix flour, remaining 1/2 cup sugar, baking powder, and salt.
Stir in milk, melted butter, and vanilla extract until a batter forms.
Pour batter evenly over cherries (do not stir).
Bake for 35–40 minutes, or until the top is golden brown.
