  • 4 cups fresh or frozen pitted cherries

  • 1 cup granulated sugar (divided)

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch

  • 1 cup all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup unsalted butter (melted)

  • 1 tsp vanilla extract

  • 3/4 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a saucepan, combine cherries, 1/2 cup sugar, lemon juice, and cornstarch. Cook until bubbly and thickened.

  3. Pour cherry mixture into a greased 9-inch baking dish.

  4. In a bowl, mix flour, remaining 1/2 cup sugar, baking powder, and salt.

  5. Stir in milk, melted butter, and vanilla extract until a batter forms.

  6. Pour batter evenly over cherries (do not stir).

  7. Bake for 35–40 minutes, or until the top is golden brown.

  8. Let cool slightly before serving.

Notes

  • You can use canned cherries, but drain them well.

  • Serve with vanilla ice cream or whipped cream for extra indulgence.

  • Leftovers can be stored in the fridge for up to 3 days.
