Instructions

  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until combined.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture, stirring until fully combined.
  • Roll the dough into 1-inch balls, then roll each ball in granulated sugar.
  • Place balls on prepared baking sheets about 2 inches apart.

  • Let cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
