  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • ⅓ cup rainbow sprinkles

Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Additional sprinkles for garnish

Instructions

  • Preheat the oven to 350°F (175°C). Line a cupcake pan with liners.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, cream the butter and sugar until light and fluffy. Add eggs and vanilla, mixing well.
  • Gradually add the dry ingredients, alternating with the milk. Stir in the sprinkles.
  • Divide the batter into cupcake liners, filling each ¾ full. Bake for 18-20 minutes, or until a toothpick comes out clean.
  • Let the cupcakes cool completely before frosting.
  • To make the frosting, beat the butter until creamy. Gradually add powdered sugar, cream, and vanilla, and beat until fluffy.
  • Frost the cooled cupcakes and top with extra sprinkles.

Notes

  • Be sure to gently fold the sprinkles into the batter to prevent color bleeding.
  • Store cupcakes in an airtight container for up to 3 days at room temperature.
