This Creamy Caprese Pasta Salad is the perfect blend of Italian flavors with a creamy twist. Ingredients

  • 12 oz rotini or bowtie pasta

  • 1 cup cherry tomatoes, halved

  • 1 cup fresh mozzarella balls (bocconcini), halved

  • 1/4 cup fresh basil leaves, torn

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream or Greek yogurt

  • 2 tbsp balsamic vinegar

  • 1 tbsp olive oil

  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and rinse under cold water.

  • In a large bowl, combine mayonnaise, sour cream, balsamic vinegar, olive oil, salt, and pepper. Whisk until smooth.

  • Add the cooled pasta, cherry tomatoes, mozzarella, and basil to the bowl.

  • Toss everything together until well coated.

 

  • Chill for at least 30 minutes before serving.

Notes

  • For extra flavor, drizzle with balsamic glaze before serving.

  • Substitute sour cream with Greek yogurt for a lighter version.

  • Use whole-wheat or gluten-free pasta as needed.
