  • 2 cups cooked chicken, shredded
  • 4 cups fresh spinach
  • 1 can cream of chicken soup
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onions and garlic until soft.
  3. Add fresh spinach to the skillet, cooking until wilted.
  4. In a large bowl, combine cooked chicken, sautéed spinach, cream of chicken soup, sour cream, milk, and half of the mozzarella. Season with salt and pepper.
  5. Pour mixture into a greased baking dish.
  6. Top with remaining mozzarella and Parmesan cheese.
  7. Bake for 25-30 minutes until bubbly and golden brown on top.
  8. Let it cool slightly before serving.
