This Creamy Chicken Gnocchi Soup is a cozy, restaurant-style dish made with tender chicken, soft gnocchi, and a rich, creamy broth. Packed with flavor from garlic, spinach, and Italian herbs, it's a perfect comfort food for chilly nights.

  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 lb potato gnocchi
  • 1 cup fresh spinach, chopped
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, garlic, carrots, and celery, and sauté until softened.
  2. Stir in shredded chicken, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes. Bring to a simmer.
  3. Pour in heavy cream and milk, stirring well.
  4. Add gnocchi and cook for about 3-4 minutes, or until they float to the top.
  5. Stir in chopped spinach and cook for another 2 minutes until wilted.
  6. Adjust seasoning if needed and serve warm.

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir in before adding gnocchi.
  • Use rotisserie chicken for convenience.
  • Swap heavy cream with half-and-half for a lighter version.
