Ingredients

Scale
  • 1 tbsp olive oil

  • 12 oz chicken sausage (sliced)

  • 1 small onion (diced)

  • 2 cloves garlic (minced)

  • 1 cup orzo pasta

  • 2 cups chicken broth

  • 1/2 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1 cup baby spinach (optional)

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add chicken sausage and cook until browned, about 4–5 minutes.

  3. Stir in onion and cook until soft, about 3 minutes.

  4. Add garlic and cook for 30 seconds until fragrant.

  5. Stir in orzo and toast for 1–2 minutes.

  6. Pour in chicken broth and bring to a boil.

  7. Reduce heat and simmer for 8–10 minutes, stirring occasionally, until orzo is tender.

  8. Stir in heavy cream and Parmesan cheese; cook until creamy.

  9. Add spinach (if using) and cook until wilted.

  10. Season with salt and pepper. Garnish with parsley and serve warm.

Notes

  • You can substitute chicken sausage with turkey or plant-based sausage.

  • Add more broth if orzo absorbs too much liquid.

  • Use half-and-half instead of heavy cream for a lighter version.
