  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cups sliced mushrooms (white or cremini)
  • 3 garlic cloves, minced
  • 1 1/2 cups chicken broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and season with salt and pepper. Cook until golden brown, about 5-6 minutes. Remove and set aside.
  2. In the same skillet, add the onions and sauté until translucent, about 4-5 minutes.
  3. Add the mushrooms and cook until they are browned and the moisture has evaporated, about 5-7 minutes. Stir in minced garlic and cook for 1 more minute.
  4. Sprinkle flour over the mushrooms and stir well to coat. Cook for 1 minute.
  5. Slowly add chicken broth while stirring constantly to avoid lumps. Bring to a simmer and let the sauce thicken, about 5-6 minutes.
  6. Reduce heat to low, stir in sour cream and Worcestershire sauce, and mix until smooth.
  7. Return the cooked chicken to the skillet and cook for another 5-7 minutes or until heated through.
  8. Serve hot over egg noodles or rice and garnish with fresh parsley.
