3–4 large cucumbers, thinly sliced
½ small red onion, thinly sliced (optional)
1 cup sour cream or Greek yogurt
2 tablespoons white vinegar or lemon juice

1 teaspoon sugar (optional)
Salt and black pepper, to taste
Peel cucumbers if desired, then slice thinly and place in a colander. Sprinkle with a little salt and let drain for 20–30 minutes.
