  • 4 chicken breasts
  • 2 cups mushrooms (sliced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 onion (chopped)
  • 3 garlic cloves (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  • Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper.
  • Cook the chicken until browned on both sides, about 4-5 minutes per side. Remove and set aside.
  • In the same skillet, sauté onions and garlic until soft. Add mushrooms and cook until browned.
  • Stir in chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 2 minutes.
  • Add heavy cream and return the chicken to the skillet. Cook for another 10-12 minutes, or until the chicken is cooked through and the sauce has thickened.
  • Garnish with fresh parsley if desired, and serve.
