  • 5 medium russet potatoes, peeled and diced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 cup shredded cheddar cheese (optional, for topping)
  • Chopped parsley (optional, for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Remove and set aside.
  • In the same pot, sauté onions until softened. Add garlic and cook for 1 minute.
  • Sprinkle flour over the onions and garlic, stirring constantly for 2 minutes.
  • Slowly add chicken broth, stirring to prevent lumps. Bring to a simmer.
  • Add diced potatoes, paprika, salt, and pepper. Cook until potatoes are tender (about 15-20 minutes).
  • Stir in cooked ground beef, milk, and heavy cream. Heat through but do not boil.
  • Serve hot, topped with shredded cheese and parsley if desired.
