  • 1 lb chicken breast, diced
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 1/2 cup spinach (optional)
  • 1 tbsp fresh basil, chopped

Instructions

  • Cook the pasta according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until golden brown.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Pour in chicken broth and let it simmer for 2 minutes.
  • Lower the heat, then add ricotta cheese, heavy cream, and Parmesan cheese, stirring until smooth.
  • Mix in cooked pasta and spinach (if using), tossing to coat evenly in the creamy sauce.
