4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup breadcrumbs (Panko preferred)
2 eggs
Salt and pepper to taste
1 tsp garlic powder
2 tbsp olive oil
For Garlic Sauce:
3 tbsp butter
4 garlic cloves, minced
1 tbsp all-purpose flour
1 ½ cups chicken broth
½ cup heavy cream
¼ cup grated Parmesan
Salt and pepper to taste
Preheat oven to 375°F (190°C).
Pound chicken breasts to even thickness. Season with salt, pepper, and garlic powder.
In one bowl, beat eggs. In another, combine Parmesan and breadcrumbs.
Dip chicken into eggs, then coat with Parmesan-breadcrumb mix.
