This Crock Pot Creamy Cajun Chicken Pasta recipe combines tender chicken, flavorful Cajun seasoning, and creamy pasta for a comforting meal.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 oz penne pasta
  • 1 cup shredded Parmesan cheese
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 bell pepper (sliced)
  • 3 cloves garlic (minced)
  • 1 small onion (diced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Season chicken with Cajun seasoning and sear in olive oil until lightly browned.
  • Place chicken in the crock pot, add garlic, onion, bell pepper, diced tomatoes, chicken broth, and heavy cream.
  • Cook on low for 4-6 hours or high for 2-3 hours.
  • Remove chicken, shred, and return to the pot.
  • Stir in cooked pasta and Parmesan cheese until creamy.
  • Serve warm, garnished with extra Parmesan and parsley if desired.

Notes

  • Adjust Cajun seasoning for desired spice level.
  • Use any pasta of your choice if penne isn’t available.
