2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp chipotle powder
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1/2 cup ranch dressing
1 tbsp adobo sauce (from canned chipotle peppers)
4 large flour tortillas
1 cup shredded cheddar cheese
1/2 cup cooked rice
1/2 cup black beans, drained and rinsed
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/4 cup diced red onion
1/2 cup shredded lettuce
Instructions
Preheat grill to medium-high heat.
In a bowl, mix olive oil, chipotle powder, smoked paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts evenly.
Grill chicken for 5-6 minutes per side until fully cooked (internal temp of 165°F). Remove and let rest for 5 minutes, then slice.
In a small bowl, mix ranch dressing with adobo sauce.
Lay tortillas flat and layer with cheese, rice, black beans, tomatoes, cilantro, red onion, lettuce, and grilled chicken slices. Drizzle with chipotle ranch sauce.
Fold in the sides of the tortilla and roll tightly into a burrito.
Lightly grill or toast the burrito for a crispy finish, if desired.
Slice in half and serve warm.
