Ingredients

  • 2 lbs baby potatoes, halved

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream

  • 1 tbsp Dijon mustard

  • 2 tbsp apple cider vinegar

  • 1/4 cup fresh dill, chopped

  • 1/4 cup red onion, finely chopped

  • Salt and pepper to taste

Instructions

  • Boil the potatoes in salted water until tender, about 15 minutes. Drain and cool.

  • In a large bowl, mix mayonnaise, sour cream, Dijon mustard, and apple cider vinegar.

  • Add chopped dill and red onion to the dressing.

  • Add the cooled potatoes to the bowl and gently mix until well coated.

  • Season with salt and pepper to taste.

 

  • Chill for at least 1 hour before serving.

Notes

For extra flavor, let the salad sit overnight. You can substitute Greek yogurt for sour cream if preferred.
