  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 8 oz shredded cheddar cheese
  • 8 oz shredded Monterey Jack cheese
  • 6 small corn tortillas
  • 1/2 cup sour cream
  • Optional: jalapeños, cilantro, avocado

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook ground beef in a skillet over medium heat, drain fat, and stir in taco seasoning.
  3. Add diced tomatoes, black beans, and corn to the beef mixture. Cook for 5 minutes.
  4. In a greased 9x13-inch baking dish, layer tortillas, beef mixture, and cheese. Repeat layers.
  5. Bake for 20-25 minutes, until cheese is melted and bubbly.
  6. Serve topped with sour cream, jalapeños, and cilantro.
