  • 4 medium green tomatoes, sliced
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup cornmeal
  • ½ cup breadcrumbs
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil (for frying)

Instructions

  • Slice green tomatoes into ¼-inch rounds.
  • Set up three bowls: one with flour, one with beaten eggs, and one with cornmeal mixed with breadcrumbs, salt, and pepper.
  • Dredge each tomato slice in flour, dip in egg, then coat with the cornmeal mixture.
  • Heat oil in a skillet over medium heat. Fry tomatoes until golden, about 2-3 minutes per side.
  • Transfer to a paper towel-lined plate to drain excess oil. Serve warm.

Notes

For extra flavor, add paprika or garlic powder to the cornmeal mixture. Serve with a creamy dipping sauce, like remoulade or ranch, for a classic Southern touch.
