Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup whole milk
  • ¾ cup rainbow sprinkles

Buttercream Frosting:

  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 2-3 tbsp heavy cream
  • 1 tsp vanilla extract
  • Additional sprinkles for topping

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating after each addition. Stir in the vanilla extract.
  • Gradually add the flour mixture, alternating with the milk, starting and ending with flour. Mix until just combined.
  • Fold in the sprinkles gently to avoid color bleeding.
  • Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • For the frosting: Beat butter until smooth, then gradually add powdered sugar, cream, and vanilla. Beat until fluffy.
  • Frost the cooled cakes and top with extra sprinkles. Serve and enjoy!

Notes

  • Be gentle when folding in the sprinkles to prevent color streaks.
  • Cakes can be stored in an airtight container for up to 3 days at room temperature.
