  • 1 ½ cups rolled oats

  • ¾ cup grated carrots

  • 1 ripe banana, mashed

  • ¼ cup maple syrup or honey

  • ¼ cup almond butter or peanut butter

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • ½ tsp ground ginger

  • ¼ tsp nutmeg

  • ¼ tsp salt

  • ½ tsp baking powder

  • ¼ cup chopped walnuts or pecans (optional)

  • ¼ cup raisins (optional)

  • ¼ cup unsweetened shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.

  2. In a large bowl, mix mashed banana, nut butter, maple syrup, and vanilla until smooth.

  3. Add oats, grated carrots, spices, baking powder, and salt. Stir to combine.

  4. Fold in nuts, raisins, and coconut if using.

  5. Spread the mixture evenly in the prepared pan.

  6. Bake for 25–30 minutes or until set and lightly golden.

  7. Let cool completely before cutting into bars.

Notes

  • Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.

  • For extra protein, add a scoop of protein powder to the mix.

 

  • You can use applesauce instead of banana if desired.
