Ingredients

  • 500g bread flour

  • 375g water

  • 100g active sourdough starter

  • 10g salt

Instructions

  1. In a large bowl, mix flour and water; let rest for 1 hour (autolyse).

  2. Add sourdough starter and mix until incorporated.

  3. Add salt and knead until smooth.

  4. Cover and let rise at room temperature for 4–5 hours, performing stretch and folds every 30 minutes.

  5. Shape the dough and place into a floured proofing basket.

  6. Refrigerate overnight (cold proof).

  7. Preheat oven to 475°F (245°C) with Dutch oven inside.

  8. Score the dough and bake covered for 20 minutes, then uncovered for 25 minutes.

  9. Cool before slicing.

  • Use an active, bubbly starter for best rise.

  • Adjust hydration based on flour type.

  • Cold proofing enhances flavor and texture.
