  • 2 boneless, skinless chicken breasts

  • 1 cup long grain white rice

  • 1 cup honey BBQ sauce

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 small onion, chopped

  • 1 ½ cups chicken broth

  • Salt and pepper to taste

  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Prepare the Rice: In a saucepan, heat ½ tablespoon olive oil, add chopped onion and garlic, sauté until soft.

  2. Add rice and stir for 1-2 minutes. Pour in chicken broth, bring to a boil, then reduce heat and cover. Cook for 15-18 minutes.
