  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 cup honey

  • 1/4 cup granulated sugar

  • 2 large eggs

  • 1/2 cup sour cream

  • 1 tsp vanilla extract

  • 1 cup diced fresh peaches

Cream Cheese Filling:

  • 8 oz cream cheese, softened

  • 1/4 cup sugar

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line cupcake pan with liners.

  2. In a bowl, whisk flour, baking powder, baking soda, and salt.

  3. In another bowl, cream butter, honey, and sugar until fluffy.

  4. Beat in eggs one at a time. Add sour cream and vanilla extract.

  5. Gradually mix in dry ingredients. Fold in diced peaches.

  6. In a separate bowl, mix cream cheese, sugar, and vanilla until smooth.

  7. Fill each cupcake liner halfway with batter, add a spoonful of cream cheese mixture, then top with more batter.

  8. Bake for 18–22 minutes or until a toothpick comes out clean. Cool before serving.

Notes

Use ripe, fresh peaches for the best flavor. These cupcakes can be stored in the refrigerator for up to 3 days.
