Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup peas
  • 1 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp rosemary

Instructions

  1. Set Instant Pot to sauté mode and heat olive oil. Brown beef cubes on all sides.
  2. Add onion and garlic, sauté until softened.
  3. Stir in tomato paste, thyme, rosemary, Worcestershire sauce, salt, and pepper.
  4. Add carrots, potatoes, and beef broth.
  5. Secure the lid, seal the valve, and set to pressure cook on high for 35 minutes.
  6. Once done, let pressure release naturally for 10 minutes, then quick release remaining pressure.
  7. Stir in peas, let sit for 5 minutes. Adjust seasoning if needed, and serve warm.

Notes

  • Add extra vegetables like celery or parsnips for added flavor.
  • Garnish with fresh parsley for a pop of color.
