  • 4 cups diced potatoes
  • 1 lb chicken breasts, cubed
  • 1 cup shredded cheddar cheese
  • 6 strips cooked bacon, crumbled
  • 1/2 cup ranch dressing
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp green onions, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss diced potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a greased baking dish and bake for 20 minutes.
  3. While the potatoes bake, season the chicken with salt and pepper.
  4. Remove potatoes from the oven, add cubed chicken on top, and return to the oven for another 20 minutes until the chicken is cooked through.
  5. Remove the dish again, top with shredded cheddar cheese and crumbled bacon. Bake for an additional 10 minutes or until cheese is melted.
  6. Drizzle with ranch dressing and sprinkle with green onions before serving.
