Ingredients

Scale
  • 2 ¼ tsp active dry yeast

  • 1 ½ cups warm water

  • 1 tbsp granulated sugar

  • 4 cups all-purpose flour

  • 1 tsp salt

  • 8 oz mozzarella cheese (cut into sticks or cubes)

  • ½ cup baking soda (for boiling)

  • 1 egg (for egg wash)

  • Coarse salt (for topping)

Instructions

  • Activate Yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.

  • Make Dough: Add flour and salt to the yeast mixture. Knead until smooth and elastic (8–10 minutes).

  • First Rise: Cover and let dough rise for 1 hour, until doubled.

  • Shape Pretzels: Divide dough into 8 pieces. Flatten each piece, place a piece of mozzarella in the center, and seal dough around it. Roll into a rope and twist into a pretzel shape.

  • Boil Pretzels: Bring water and baking soda to a boil. Boil each pretzel for 30 seconds, then place on a baking sheet.

  • Bake: Brush with egg wash, sprinkle with coarse salt, and bake at 425°F (220°C) for 12–15 minutes until golden.

  • Serve: Best enjoyed warm with dipping sauce if desired.

Notes

  • You can substitute mozzarella with cheddar or pepper jack for a spicy twist.

  • Freeze before baking for quick future snacks.

  • Serve with marinara or mustard for dipping.
