  • 2 cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1½ cups heavy cream, whipped
  • 6 oz dark chocolate, melted and cooled
  • Green food coloring (optional)
  • Whipped cream and chocolate shavings for garnish

Instructions

  • Mix chocolate cookie crumbs with melted butter. Press into a springform pan to form the crust. Chill in the fridge.
  • In a bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, and peppermint extracts. Mix well.
  • Fold in whipped cream and melted chocolate until combined. Add food coloring if desired.
  • Pour mixture over the crust. Smooth the top.
  • Chill for at least 6 hours or overnight until set.
  • Garnish with whipped cream and chocolate shavings before serving.
