  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup tomato sauce
  • 2 cups uncooked pasta (such as rotini or penne)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in garlic and taco seasoning, cooking for 1 minute until fragrant.
