  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 ½ cups orzo pasta
  • 4 cups chicken broth
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup spinach, chopped
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Heat olive oil in a large pot over medium-high heat.
  • Season the chicken with salt and pepper. Cook until browned, about 5-6 minutes, then remove from the pot.
  • In the same pot, add diced onion and cook until softened. Add minced garlic and cook for another minute.
  • Pour in the chicken broth, diced tomatoes, oregano, and basil. Stir to combine.
  • Add orzo and bring the mixture to a boil. Reduce heat to a simmer, cover, and cook for 8-10 minutes or until the orzo is tender.
  • Return the cooked chicken to the pot and stir in chopped spinach. Cook until the spinach wilts.
  • Remove from heat and stir in grated Parmesan cheese.
  • Garnish with fresh parsley and serve warm.
