Ingredients

  • 2 boneless, skinless chicken breasts (cubed)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • Salt & pepper to taste
  • ½ cup sun-dried tomatoes (chopped)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • ½ cup grated parmesan cheese
  • 1 cup spinach (optional)
  • Fresh basil for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden brown.
  • Stir in garlic, red pepper flakes, and sun-dried tomatoes, cooking for 1-2 minutes.
  • Pour in chicken broth and heavy cream, then add pasta. Stir well and bring to a simmer.
  • Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
  • Stir in parmesan cheese and spinach (if using) until combined.
  • Garnish with fresh basil and serve warm.

Notes

  • Use any pasta shape you prefer.
  • Substitute heavy cream with half-and-half for a lighter version.
