  • 1/4 cup unsweetened cocoa powder

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/3 cup peanut butter (creamy or chunky)

  • 1/3 cup maple syrup or honey

  • 2 large eggs

  • 1 1/4 cup milk (dairy or non-dairy)

  • 1 tsp vanilla extract

  • 1/3 cup mini chocolate chips (optional)

  • Extra peanut butter for drizzling (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease an 8x8-inch baking dish.

  • In a large bowl, mix oats, cocoa powder, baking powder, and salt.

  • In another bowl, whisk peanut butter, maple syrup, eggs, milk, and vanilla until smooth.

  • Combine wet and dry ingredients; stir well.

  • Fold in mini chocolate chips if using.

  • Pour mixture into prepared baking dish and spread evenly.

  • Bake for 30-35 minutes, until set.

 

  • Cool slightly, drizzle extra peanut butter if desired, and serve.

Notes
