1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup creamy peanut butter
1 large egg
1/2 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup mini chocolate chips
Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
In a large bowl, cream together butter, granulated sugar, brown sugar, and peanut butter until smooth.
Beat in the egg and vanilla extract.
In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients.
Stir in the chocolate chips.
Scoop dough into muffin tin, filling each about 2/3 full.
Bake for 10–12 minutes, until golden brown and set.
Cool in the pan for 5 minutes before transferring to a wire rack.
