Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and pink food coloring until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in white chocolate chips.
  7. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  8. Bake for 10-12 minutes or until the edges are set and the centers are slightly soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
