Ingredients

  • 1 lb ground turkey

  • 1 cup orzo pasta

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 can (14.5 oz) diced tomatoes

  • 2 cups chicken broth

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • 1 cup spinach (optional)

  • Grated Parmesan for garnish (optional)

Instructions

  • Heat olive oil in a skillet over medium heat.

  • Add diced onion and sauté until soft, then add garlic and cook 1 minute.

  • Add ground turkey and cook until browned.

  • Stir in orzo and toast for 1–2 minutes.

  • Pour in diced tomatoes and chicken broth. Add Italian seasoning, salt, and pepper.

  • Bring to a boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally.

  • Stir in spinach (if using) and cook until wilted.

 

  • Serve hot, garnished with Parmesan if desired.
