Ingredients

Scale
  • 1 lb sausage (spicy or mild)
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup kale or spinach
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot and cook the sausage until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until soft.
  3. Add diced sweet potatoes, smoked paprika, salt, and pepper. Stir well.
  4. Pour in the chicken broth and bring to a boil, then reduce heat and simmer for 20-25 minutes until potatoes are tender.
  5. Add the cooked sausage back to the pot along with the kale or spinach. Simmer for an additional 5 minutes.

Notes

  • For a creamier texture, blend half the soup before adding the sausage back.
  • Substitute kale with spinach for a milder flavor.
