  • 2 boneless, skinless chicken breasts

  • 2 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1 medium zucchini, sliced

  • 1 cup fresh or frozen sweet corn

  • Salt and pepper to taste

  • 1/2 tsp paprika

  • 1 tbsp olive oil

  • Fresh parsley for garnish (optional)

Instructions

  • Season chicken breasts with salt, pepper, and paprika.

  • Heat olive oil in a large skillet over medium heat.

  • Cook chicken 5–7 minutes per side until golden and cooked through. Remove and set aside.

  • In the same skillet, add butter and garlic. Sauté for 30 seconds.

  • Add zucchini and corn. Cook 4–5 minutes until tender.

  • Return chicken to skillet, spooning garlic butter and veggies over top.

 

  • Garnish with parsley and serve warm.
