  • 4 boneless, skinless chicken breasts
  • 1 ½ cups fresh spinach, chopped
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Toothpicks (for sealing the chicken)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing them horizontally without cutting all the way through.
  3. In a bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks.
  5. Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 2-3 minutes on each side until golden.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature of 165°F/75°C).
