Ingredients

Scale
  • 1 cup all-purpose flour

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter (softened)

  • ⅔ cup granulated sugar

  • 1 tsp vanilla extract

  • 1 large egg

  • ½ cup buttermilk

  • 1 cup fresh strawberries (halved or sliced)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line with parchment.

  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In a separate bowl, cream butter and sugar until light and fluffy.

  4. Beat in the egg and vanilla until fully combined.

  5. Gradually mix in the dry ingredients alternately with the buttermilk.

  6. Pour batter into prepared pan. Evenly place strawberries on top, cut-side down.

  7. Bake for 35–40 minutes or until a toothpick comes out clean.

  8. Let cool before slicing and serving.

Notes

  • You can use frozen strawberries—just thaw and pat dry first.

  • A sprinkle of turbinado sugar on top adds a lovely crunch.

  • Great served warm with whipped cream or vanilla ice cream.
