Ingredients

  • 4 boneless chicken breasts
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup mozzarella cheese (shredded)
  • 1/4 cup Parmesan cheese (grated)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast without cutting all the way through.
  3. In a bowl, mix spinach, mozzarella, Parmesan, garlic, salt, and pepper.
  4. Stuff the mixture into each chicken breast pocket.
  5. Season the chicken with paprika, salt, and pepper on the outside.
  6. Heat olive oil in a skillet over medium heat, then sear the chicken breasts for 2-3 minutes per side until golden.
  7. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through (165°F internal temperature).
  8. Let the chicken rest for a few minutes before serving.
