  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup sun-dried tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts by cutting a pocket in the side. Season with salt, pepper, and Italian seasoning.
  3. In a bowl, mix together spinach, mozzarella, sun-dried tomatoes, and garlic.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks.
  5. Heat olive oil in a skillet over medium heat. Sear the chicken breasts on each side until golden brown, about 3 minutes per side.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 5 minutes before serving.
