2 cups ripe peaches, peeled and sliced (fresh or frozen)
2 tbsp honey or maple syrup (optional, to taste)
1/2 cup full-fat Greek yogurt or coconut yogurt
1/2 cup milk of choice (dairy or non-dairy)
1 tsp vanilla extract
Pinch of salt
In a blender, combine peaches, honey (if using), vanilla, and a pinch of salt. Blend until smooth.
Add yogurt and milk, and pulse to combine until creamy.
Taste and adjust sweetness if needed.
Pour the mixture into ice pop molds.
Insert sticks and freeze for at least 4–6 hours, or until solid.
To release, run warm water over the molds for a few seconds before removing.
For chunkier pops, reserve a few peach slices and stir them into the mix before pouring into molds.
Can substitute sweetener with agave or omit entirely if peaches are very ripe.
Use coconut milk and coconut yogurt for a dairy-free version.
