This Summer Pineapple Coconut Pops recipe is a tropical treat made with real pineapple and creamy coconut milk—perfect for hot weather. Easy to prepare and naturally sweet, they’re a healthy frozen snack for all ages.

Ingredients

  • 2 cups fresh pineapple chunks (or canned in juice, drained)

  • 1 cup full-fat coconut milk

  • 23 tbsp honey or maple syrup (optional, to taste)

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: shredded coconut for texture

Instructions

  • Add pineapple chunks, coconut milk, sweetener (if using), vanilla extract, and salt to a blender.

  • Blend until smooth and creamy.

  • Taste and adjust sweetness if needed.

  • Pour mixture into popsicle molds.

  • Insert sticks and freeze for at least 4–6 hours or until solid.

  • To release, run warm water over the outside of the molds for a few seconds.

 

  • Enjoy immediately or store in freezer bags.

Notes

  • For a chunkier texture, reserve a few pineapple pieces and stir them into the mix before freezing.

  • Use silicone molds for easier release.

  • Can be made vegan with maple syrup instead of honey.
