This Summer Pineapple Coconut Pops recipe is a tropical treat made with real pineapple and creamy coconut milk—perfect for hot weather. Easy to prepare and naturally sweet, they’re a healthy frozen snack for all ages.
2 cups fresh pineapple chunks (or canned in juice, drained)
1 cup full-fat coconut milk
2–3 tbsp honey or maple syrup (optional, to taste)
1 tsp vanilla extract
Pinch of salt
Optional: shredded coconut for texture
Add pineapple chunks, coconut milk, sweetener (if using), vanilla extract, and salt to a blender.
Blend until smooth and creamy.
Taste and adjust sweetness if needed.
Pour mixture into popsicle molds.
Insert sticks and freeze for at least 4–6 hours or until solid.
To release, run warm water over the outside of the molds for a few seconds.
Enjoy immediately or store in freezer bags.
For a chunkier texture, reserve a few pineapple pieces and stir them into the mix before freezing.
Use silicone molds for easier release.
Can be made vegan with maple syrup instead of honey.
