  • 4 large russet potatoes
  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Optional toppings: green onions, jalapeños, avocado, cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Wash, dry, and pierce potatoes with a fork.
  2. Rub potatoes with olive oil, place on a baking sheet, and bake for 45-50 minutes until tender.
  3. In a skillet, cook ground beef or turkey over medium heat until browned. Drain excess fat.
  4. Stir in taco seasoning and water. Cook for 2-3 minutes until well combined and heated through.
  5. Once potatoes are baked, slice them open and fluff the insides with a fork.
  6. Top with cooked taco meat, shredded cheese, sour cream, and salsa. Add optional toppings as desired.
  7. Serve immediately and enjoy!
