Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup heavy cream
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 (10 oz) package cheese tortellini
  • 3 cups fresh spinach
  • Salt and pepper, to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Cook the sausage until browned. Remove and set aside.
  • In the same pot, sauté onion and garlic until softened.
  • Add chicken broth, diced tomatoes, dried basil, oregano, and red pepper flakes. Bring to a simmer.
  • Stir in heavy cream, then add the cooked sausage back to the pot.
  • Add tortellini and cook according to package instructions.
  • Stir in fresh spinach until wilted. Season with salt and pepper to taste.
