  • 3 pounds Yukon Gold or Russet potatoes, peeled and cubed

  • 1 cup mayonnaise

  • 2 tablespoons yellow mustard

  • 3 hard-boiled eggs, chopped

  • 1/2 cup celery, finely chopped

  • 1/4 cup red onion, finely chopped

  • 1/4 cup dill pickles or relish

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika (for garnish)

  • Optional: fresh dill or parsley for garnish

Instructions

  1. Boil potatoes in salted water until fork-tender, about 10–12 minutes. Drain and let cool.

  2. In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.

  3. Add cooled potatoes, eggs, celery, onion, and pickles. Gently mix until well combined.

  4. Cover and refrigerate for at least 1 hour before serving.

  5. Garnish with paprika and fresh herbs if desired.

Notes

  • For a lighter version, use half Greek yogurt and half mayo.

  • Let the salad sit overnight for enhanced flavor.
