3 pounds Yukon Gold or Russet potatoes, peeled and cubed
1 cup mayonnaise
2 tablespoons yellow mustard
3 hard-boiled eggs, chopped
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/4 cup dill pickles or relish
1 tablespoon apple cider vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika (for garnish)
Optional: fresh dill or parsley for garnish
Boil potatoes in salted water until fork-tender, about 10–12 minutes. Drain and let cool.
In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.
Add cooled potatoes, eggs, celery, onion, and pickles. Gently mix until well combined.
Cover and refrigerate for at least 1 hour before serving.
Garnish with paprika and fresh herbs if desired.
For a lighter version, use half Greek yogurt and half mayo.
